I’ve been shut in the house for the last week. Except to shovel or salt, I refuse to leave–the roads are far too dangerous for unnecessary travel. The early week snow has turned to ice. Wintry midday temperature of 20 degrees, 18 mph winds with blasts up to 34 mph will only worsen come nightfall.
Not much is left in the refrigerator, but my freezer is full as is my pantry. I am making do with what I have until a BIG THAW. I never claimed to be a gourmet chef. Cooking my style is short order. Prep time flies by as I put the hot water kettle on, fry myself an egg over-easy, flip pancakes (love that spatula that will work even better with big griddle cakes) , and brown a potato patty as well as a couple of sausage ones.
Time to put everything together. I forgo syrup. I eat. Too bad I didn’t make enough for seconds. Finished, I reflect on my suppertime meal. I like Breakfast Night. It’s a saver.
